For the first time I tried an unusual tiramisu from matches in a cafe, and since then I have been thinking for a long time whether it is possible to do something similar on my own. I had to experiment a little with recipes to take into account all the nuances. I share the result!
Ingredients
- Matcha Tea - 3.5 tbsp.l.
- Egg yolks - 3 pieces
- Sugar - 70 g
- Marsala - 2 tbsp.l .
- Mascarpone - 250 g
- Cream (33%) – 360 ml
- Water - 0.5 glasses
- Savoyardi Cookies - 200 g
Step-by-step cooking recipe
Beat the yolks, marsala and half the sugar with a mixer.
Put it in a water bath and continue whipping, heating, until thickened.
Quickly cool the yolks in a bowl with ice or cold water.
Add mascarpone and mix.
Whisk the cream and the remaining sugar until fluffy, and combine both masses.
Dilute 1.5 tablespoons of matcha in water at a temperature of about 80 degrees. Let it cool down.
Put a little cream in the mold.
Soak savoyardi matches and lay out the next layer.
Then cream again, another layer of savoyardi in the match and cream again.
Sprinkle the tiramisu with the remaining dry matcha and put it in the refrigerator overnight.
