Pour milk over the dried lavender flowers and boil for 3 minutes.
Turn off the heat, cover with a lid and insist under the lid for 40 minutes.
Strain the fragrant milk through a double layer of gauze.
Whisk the yolks with sugar.
Add flour and mix until smooth.
Put the lavender milk in a water bath, add the stock with the yolks and boil for 10 minutes, stirring frequently. The mass should thicken strongly.
Cool to room temperature, put in a large mold and put in the freezer for 40 minutes.
Take out the workpiece, beat it with a mixer and put it in the freezer for another 40 minutes.
Repeat the procedure two more times. Put the ice cream in serving molds and put it in the freezer for another 5 hours.
