I love chocolate-covered marshmallows, but I constantly don't like store brands. Something too sweet, too dry or tasteless glaze – something is constantly wrong. One day I got tired of always looking for the perfect solution, and I tried to make such a marshmallow at home. It turned out to be nothing complicated!
Ingredients
- Apples - 6 pieces
- Sugar - 600 g
- Bitter chocolate - 50 g
- Agar-agar - 9 g
- Egg whites - 1 piece
- Vanilla sugar - 20 g
- Water - 150 ml
Step-by-step cooking recipe
Peel the apples and bake in the microwave or in the oven until soft. Grind with a blender.
Boil the puree on low heat for 4-5 minutes. Add vanilla sugar, remove from heat, cover with clingfilm and let cool.
Mix agar-agar with water, bring to a boil and boil for 4-5 minutes.
Add sugar and stir. Boil the syrup for about 5 more minutes and remove from the heat.
Whisk the protein with applesauce to a fluffy white mass.
Pour in the syrup in a thin stream, continuing to beat.
Shape the marshmallow with a pastry syringe on parchment and let it harden.
Melt the chocolate in a water bath.
Dip the marshmallows and let them freeze again.
