There are many interesting recipes for this cake. I like the classic version with berries and chocolate glaze the most. The cooking process is long, but not particularly complicated. If desired, even a beginner can cope with it.
Ingredients
- Egg whites - 4 pieces
- Wine vinegar - 1 tsp.
- Powdered sugar - 200 g
- Starch - 1 art.l.
- Cream (33% fat content) – 200 ml
- Mascarpone - 100 g
- Powdered sugar - 50 g
- Berries (any) – 250 g
- Powdered sugar - 1 tbsp.l.
- Orange peel - 2 g
Step-by-step cooking recipe
Beat the cooled whites to sharp peaks.
Without stopping whipping, add powdered sugar and vinegar.
Pour in the starch and gently mix with a silicone spatula.
Draw three circles with a diameter of 20 centimeters on parchment paper. Put the protein mass on each one.
Bake the meringue for 1.5-2 hours in an oven preheated to 100 degrees.
Whisk cream with powdered sugar.
Add mascarpone and stir.
In a small saucepan, mix sugar with cocoa.
Add milk, melted butter and bring to a boil over low heat.
Assemble the cake by smearing the cakes with cream.
Brush with cream on top, garnish with berries, sprinkle with zest and pour over the cooled glaze.
