Tiramisu is usually prepared quickly, but this recipe will take more time. Pistachios should be thoroughly peeled from the shell and husk. You will also need a culinary thermometer for this dessert. It will tell you the exact temperature of the sugar syrup.
Ingredients
- Savoyardi Cookies - 300 g
- Pistachios (peeled unsalted) – 250 g
- Mascarpone - 300 g
- Cream (33% fat content) – 250 ml
- Coffee (espresso) – 300 ml
- Sugar - 300 g
- Water - 50 ml
- Cocoa (for decoration) – 2 art.l.
Step-by-step cooking recipe
Mix water with 150 g of sugar and bring to a temperature of 120 degrees.
Pour the syrup into a bowl with pistachios and mix. They should be covered with a sugar crust.
Chop the cooled pistachios in a blender until pasty.
Whisk the cream with the remaining sugar until thickened.
Add mascarpone, pistachio paste and mix well.
Dip each cookie into the coffee for a few seconds.
Smear the bottom of the plate with cream and lay out one row of cookies.
Add a thick layer of cream and lay out the cookies again. Repeat the steps until the dessert reaches the desired height.
Brush with a generous layer of cream, sprinkle cocoa thickly and put it in the refrigerator overnight.
