Step-by-step cooking recipe
Whisk the whites for the sponge cake with half the sugar until fluffy.
Whisk the yolks with the remaining sugar. Add a third of the proteins and whisk.
Continuing to beat, add half of the sifted dry ingredients and again a third of the proteins. And again.
Divide the dough in half and put two biscuits on parchment.
Bake them in the oven for about 10 minutes at 180 degrees. Cut the same cakes and let them cool on the grill.
For coffee mousse, dilute gelatin in 10% cream x according to the instructions.
Whisk eggs with sugar with a whisk, add warm coffee and put on minimum heat.
While stirring, heat the mixture to about 80 degrees.
Add gelatin, stir and cool.
Whisk the heavy cream to peaks and mix with the coffee mass.
Put a sponge cake in a mold, soak it with sweet coffee and pour out half of the coffee mousse. Repeat the layers and put the workpiece in the refrigerator for a couple of hours.
Dilute the gelatin for the cream mousse in water.
Whisk cream cheese with powdered sugar and vanilla. Add the gelatin and stir.
Whisk cream to peaks and mix with cheese cream.
Put the coffee part of the dessert in a larger mold and pour the cream mousse on the sides and on top.
Put the tiramisu in the refrigerator until it hardens.
