This delicious vegetable salad with eggs and shrimp is perfect as a simple snack or a light dinner for those people who watch their figure. Eggs can be used both chicken and quail.
Ingredients
- Salad mix - 40 g
- Tomatoes - 2 pieces
- Shrimp - 100 g
- Chicken eggs (boiled) – 2 pieces
- Mustard - 1 tsp.
- Vegetable oil - 2 tbsp.l.
- Lemon juice - 1 tsp.
- Salt - to taste
Step-by-step cooking recipe
Put the salad mix in a colander, rinse and let the water drain. Transfer to a salad bowl.
Cut the tomatoes into small pieces and put them in a bowl.
Peel the hard-boiled eggs, cut them into small pieces (like tomatoes) and put them in a bowl.
Defrost the shrimp and also put it in a salad bowl.
Make a salad dressing from mustard, oil and lemon juice. Stir and pour into a salad bowl. Add a pinch of salt.
Mix everything thoroughly. The salad is ready!
Serve the salad immediately, as after a while it may become watery.
