Eggplant rolls with nuts are prepared in the best traditions of Georgian cuisine. Therefore, I advise you to serve them accordingly – sprinkled with chopped coriander and pomegranate seeds. Rolls are good on their own or with a spicy tomato sauce.
Ingredients
- Eggplant - 2 pieces
- Walnuts - 1 glass
- Garlic - 3 cloves
- Cilantro - 4 twigs
- Chili pepper - 1 piece
- Olive oil - 1 tbsp.l.
Step-by-step cooking recipe
Cut the eggplant into plates, add salt and leave for 10-15 minutes.
Rinse, dry and fry on both sides on a grill or frying pan.
Chop nuts with garlic, cilantro, chili and olive oil in a blender.
Wrap the filling in eggplant plates with a roll.
