Budget version of a favorite dish by many. Beef tail jelly is prepared very simply and always freezes perfectly. All thanks to the large amount of cartilage. No need to add dice, knuckle or shank. The broth will be excellent without them.

Wash the beef tail with hot water, cut it and put it in a saucepan.
Add spices, water and cook for 4 hours over low heat. The foam that will appear in the process, be sure to remove.
Add carrots, peeled garlic and onion, cook all together for another 40 minutes.
Remove the tail and vegetables from the broth, put them on a plate and put them aside to cool.
Strain the broth, add salt, boil for 1 minute and turn off the heat
Cut the tail and carrots, put them in prepared containers.
Pour the broth and put it in a cool place for 6 hours.
