For Marinade:
- Water - 125 ml
- Vegetable oil - 125 ml
- Apple cider vinegar - 125 ml
- Sugar - 100 g
- Salt - 1.5 tsp.
Step-by-step cooking recipe
Cut the eggplant into circles 1 cm thick. Fry them in vegetable oil until golden.
Finely chop the onion, garlic and herbs. Grate the carrots on a Korean grater, and mix everything together.
Lay out eggplant circles and carrot mixture in layers.
Mix all the ingredients for the marinade, bring to a boil and immediately pour over the snack.
Leave the eggplants under pressure for a day – a jar of water is enough.
