Eggplant with tomatoes is a classic combination in many cuisines of the world. This time I propose to supplement them with tender mozzarella. It turns out a quick and delicious casual snack in the Italian style.
Ingredients
- Eggplant - 2 pieces
- Cherry tomatoes - 140 g
- Mozzarella - 80 g
- Basil - 1 handful
- Garlic - 2 clove
- Olive oil - 2 tbsp.l.
- Spices and seasonings - 1 tsp.
Step-by-step cooking recipe
Cut the eggplant into circles, put it on parchment, sprinkle with spices and drizzle with olive oil.
Finely chop the cherry, garlic and basil, and put on top.
Sprinkle the snack with grated mozzarella and bake in the oven for 15 minutes at 200 degrees.
