Carefully scrape the pork legs with a knife to remove the top layer, and rinse under running water.
Cut the chicken into large pieces and also rinse thoroughly.
Put the pork legs, chicken, bay leaf, allspice and black pepper in a deep saucepan. Pour in cold water, add peeled onions, carrots and cook over low heat for 4.5 hours.
Add salt, finely chopped garlic cloves and cook for another 30 minutes.
Fish out the meat, cool it slightly, separate it from the bone and finely chop it.
Discard the onion and bay leaf, cut the carrots into small pieces.
Strain the broth twice through cheesecloth to make the jelly transparent and beautiful.
Arrange the meat and carrots on plates. Carefully pour in the broth and leave for 2 hours at room temperature.
Transfer the cooled jelly to the refrigerator for 8-10 hours.
