Eggplant rolls with cottage cheese are an easy–to-prepare and very tasty snack that is quite suitable for a festive table. It is important to choose a large vegetable to get blanks for rolls of suitable sizes.

Wash the eggplants and cut them into plates, brush with olive oil and sprinkle with herbs.

Place the plates on a hot grill or in a frying pan, fry on both sides for 2-3 minutes.

Make the filling – mix cottage cheese with chopped aromatic herbs and crushed garlic.

Transfer the fried plates to a plate.

Put a teaspoon (or more) of filling on the edge of the eggplant plate, roll it into a small neat roll. Repeat the steps with the remaining blanks.

Add pine nuts and the snack can be served. It is good both in warm and cold form.
