The first mention of such a sauce in history occurs in the I century BC. Then it was prepared exclusively from garlic and mustard. The modern version of aioli sauce involves the addition of yolks, butter and lemon juice. I tell you how I cook it.


Step-by-step cooking recipe

Peel the garlic, sprinkle with salt and rub in a mortar.

Add egg yolks, mustard and mix until smooth.

Pour in the lemon juice, oil and mix everything well again.
