Real tkemali is made from a special variety of Georgian plums. I suggest replacing them with green cherry plum. If the taste seems too sour to you, add more sugar. The amount of hot pepper can also be adjusted at your discretion.
Ingredients
- Cherry Plum (green) – 1 kg
- Cilantro - 20 g
- Mint - 2 twigs
- Garlic - 3 cloves
- Hop-suneli - 2 tsp.
- Ground red pepper - to taste
- Sugar - 50 g
- Salt (without slide) – 1 tbsp.l.
Step-by-step cooking recipe
Fill the cherry plum with hot water and boil for 5 minutes. The skin should start to burst.
Drain the water. Save about 200 ml for further actions.
Rub the remaining mass through a sieve to get rid of the bones and skins.
Finely chop the mint, cilantro and peeled garlic.
Put the mass of cherry plums, garlic, herbs and 200 ml of the prepared liquid in a saucepan. Boil everything together for 15 minutes after boiling.
Add salt, sugar, spices and cook for another 5-7 minutes. The finished sauce should be infused for 3-4 hours.
