One of the best finds of Balkan cuisine is aivar vegetable paste, which is prepared on the basis of Bulgarian pepper. It can be used in different ways, and it also makes an excellent universal sauce for meat, potatoes and other dishes.
Ingredients
- Bell pepper - 500 g
- Eggplant - 250 g
- Hot red pepper - 1-2 pieces
- Onion - 1 piece
- Garlic - 2 clove
- Salt - 2 pinches
- Sugar - 2 pinches
- Spices and seasonings - 1 tsp.
- Olive oil - 30 ml
Step-by-step cooking recipe
Cut the eggplant in half. Bake it and the bell pepper on parchment in the oven for about 30 minutes at 200 degrees until scorched.
Put the vegetables in a bag for a while and then peel.
Chop them finely with a knife.
Chop hot pepper, onion and garlic in a blender.
Mix all the ingredients together, bring the aivar to a boil and boil for about 15 minutes until thick.
