Don't rush to throw out the beet tops. It is not only a delicious ingredient for dishes, but also a valuable source of vitamins. Make a delicious salad out of it. Try not to overexpose the liver in the pan, otherwise it will become stiff.

Rinse the chicken liver and peel off the films.

Heat the oil in a frying pan and fry the liver until tender. Season with salt and pepper before turning it off.

Cool the liver and cut into small pieces.

Tear the beet tops into pieces or leave them whole if they are not large.

Mix beet tops, chicken liver, salt and ground pepper.

Add Dijon mustard and stir.
