Quinoa with vegetables is not the most obvious combination, but nevertheless it is definitely worth your attention. This is a very original recipe in the traditions of Oriental cuisine. Serve the salad necessarily cold, so let it cool down.
Ingredients
- Quinoa - 100 g
- Beans - 100 g
- Bow purple - 1 piece
- Bell pepper - 1 piece
- Cucumbers - 1 piece
- Tomatoes - 1 piece
- Garlic - 2 cloves
- Parsley - 0.5 beam
- Olive oil - 2 tbsp.l.
- Lemon juice - 2 tsp.
Step-by-step cooking recipe
Soak the beans in advance and boil them until soft.
Separately boil the quinoa according to the instructions and let them cool with the beans.
Finely chop all the vegetables and herbs.
Mix the salad and season with olive oil and lemon juice.
