Such an unusual salad could be called a side dish, but still it is too self-sufficient for this. The combination of quinoa with lentils is very unexpected, but at the same time interesting. And spinach and carrots add colors to the dish.

Step-by-step cooking recipe

Boil the quinoa and lentils according to the instructions. Stir and season with olive oil and lemon juice.

Finely chop the mushrooms and fry for a couple of minutes.

Add the chopped carrots and fry for another 3-5 minutes.

Add the chopped spinach and continue frying until it reduces in volume.

Mix all the ingredients and season to taste. Sprinkle the salad with chopped cashews.
