The charm of this salad is in its striking simplicity. Believe me, it's only at first glance there is nothing special about it. If it seems to you that pumpkin is strangely combined with cauliflower – then just try it once!
Ingredients
- Pumpkin - 150 g
- Cauliflower - 150 g
- Mint - 1 twig
- Orange juice - 2 tbsp.l .
- Pumpkin seeds - 10 g
- Salt - 1 pinch
- Ground black pepper - 1 pinch
Step-by-step cooking recipe
Cut the pumpkin into a cube of about 1.5 cm.
Disassemble the cauliflower into small inflorescences and rinse them thoroughly.
Boil the vegetables in water or in a steamer for literally 6-8 minutes. It should become softer, but remain crispy.
Chop the mint, mix with orange juice, add salt and pepper, and pour this over the vegetables.
Sprinkle pumpkin seeds on top of the salad and serve.
