Hearty and fragrant pork broth is a great base for borscht and other rich thick soups. It is also perfect for recipes of Asian cuisine, and especially for Chinese. In this case, any part of the carcass will do.

Fill the pork with water, bring to a boil and remove the foam.

Add the peeled onion, carrot, garlic and whole herbs.

Cook the broth on low heat for 1-1.5 hours. Add water as needed.

15 minutes before the end, add the bay leaf, salt and pepper.

To make the broth clean and transparent, strain it through a double-folded gauze.
