Herring under a fur coat occupies one of the first places in the list of my favorite salads. Recently, I've been cooking it with a spicy dressing - I mix yogurt with mustard, lemon juice and ground ginger. The sharpness can be adjusted to taste.
Ingredients
- Herring (low salt) – 1 piece
- Beetroot (boiled) – 200 g
- Potatoes (boiled) – 200 g
- Carrots (boiled) – 2 pieces
- Onion - 2 pieces
- Chicken eggs (boiled) – 2 pieces
- Lemon juice - 1 art.l.
- Yogurt - 150 ml
- Mustard - 2 tbsp.l.
- Ground ginger - 0,5 tsp.
- Ground black pepper - to taste
- Salt - to taste
Step-by-step cooking recipe
Peel the herring, gut and cut into small pieces. Chop the onion, grate the remaining vegetables on a coarse grater.
Mix yogurt, mustard, lemon juice and ground ginger. Select a part of the dressing and mix it with beet juice.
Assemble the salad in layers in the following order: potatoes, onions, carrots, eggs, herring and beets. After potatoes and carrots, add salt, pepper and generously lubricate with dressing.
Decorate the finished salad with pink dressing and egg crumbs on top, and then put it in the refrigerator for 2 hours.
