Did you know that herring under a fur coat can be cooked deliciously without potatoes? The salad turns out to be lighter, so it will surely appeal to everyone who watches the figure. If desired, the vegetables can be steamed, and the usual mayonnaise can be replaced with lean.
Ingredients
- Herring (lightly salted) – 1 piece
- Beetroot (boiled) – 250 g
- Carrots (boiled) – 200 g
- Chicken eggs (boiled) – 3 pieces
- Onion - 1 piece
- Mayonnaise - 160 ml
- Parsley (for decoration) – 2 twigs
- Salt - to taste
- Ground black pepper - to taste
Step-by-step cooking recipe
Peel the herring from the skin and fins, gut and finely chop.
Chop the onion with a knife, grate the eggs and boiled vegetables on a coarse grater. Select some egg crumbs for decoration.
Put layers of herring, onions, carrots and eggs on the bottom of a wide plate. Add salt, pepper and mayonnaise.
Mix beetroot with salt, pepper, remaining mayonnaise and put on eggs.
Smooth the top layer with a fork, garnish with egg crumbs and parsley. Insist the finished salad in the refrigerator for 1.5-2 hours.
