Beans are popular in many countries. Soups, snacks, stews and salads are prepared with it. I suggest today to stop at the last category and prepare a healthy salad with beans. You can serve it as an independent dish with croutons or bread rolls.
Ingredients
- Red Beans (dry) – 150 g
- Arugula - 30 g
- Cherry tomatoes - 150 g
- Parmesan - 20 g
- Olive oil - 3 art.l.
- Ground black pepper - to taste
- Salt - to taste
- Water - 1,5 l
Step-by-step cooking recipe
Wash the red beans and soak for 2 hours.
Change the water and boil over low heat until tender. On average, it takes 40-60 minutes.
Cut cherry tomatoes in half.
Grate the parmesan into thin slices on a special grater.
Mix the boiled beans, tomatoes, arugula and parmesan.
Add salt, ground pepper and oil.
