Chop tomatoes, zucchini, peeled onion and bell pepper.

Melt butter in a deep frying pan, add onion and bell pepper and fry until golden brown.

Add zucchini, black pepper and peas and continue to fry for another 7-10 minutes.

Flatten the vegetables with a spatula, pour in the couscous evenly, pour in boiling water and cover with a lid. Cook for 5 minutes.

Add salt, mix gently and add tomatoes. Turn off and cover for 15 minutes.

When serving, add basil to the plate.
