Every housewife has her own proven recipe for pumpkin porridge. But this is not a reason to give up something new and try other ideas. Therefore, catch my version – with rice and fragrant spices.

Peel the pumpkin, cut into small cubes, fill with water and simmer for about 10 minutes over medium heat.
Pour milk to the pumpkin, add sugar, salt and spices to taste, and mix. I like cardamom, star anise, vanilla, cinnamon, cloves and nutmeg.
Bring to a boil and evenly cover everything with rice, but do not mix – as for pilaf.
Simmer the porridge under the lid for about half an hour on low heat, and only then stir.
When serving, add butter, and optionally – honey, nuts or dried fruits.
