Perch is a fish with a small amount of bones and tender, moderately fatty meat. Cook it in a crispy batter with spices, which will preserve the juiciness of the pieces and give the fish a spicy flavor. The dish is suitable for both a family dinner and a festive table.

Ingredients

  • Sea bass (fillet) – 500 g
  • Flour - 100 g
  • Chicken eggs - 2 pcs.
  • Mineral water - 50 ml
  • Lemon juice - 1 art.l.
  • Salt - pinch
  • Ground black pepper - to taste
  • Vegetable oil - for frying

Step-by-step cooking recipe

Wash the perch fillet, cut into pieces, add salt and pepper to taste, leave to marinate for 10 minutes.

Prepare the batter: whisk the eggs with salt, mineral water and lemon juice. Enter the sifted flour and whisk again until smooth.

Roll the pieces of fish in a small amount of flour and put them in the batter.

Fry the fish in preheated vegetable oil on both sides until golden brown (7-10 minutes). Remove excess oil with a paper towel.

Serve the perch fillet with fresh or baked vegetables.
