Wash the cherries under running water, remove the bones and pour in half the sugar.
Mix and leave on a strainer to drain excess juice.
Sift the flour into a wide bowl, collect it with a slide and make a small depression in the center.
Add salt, sugar, warm water and knead a soft dough.
Cover with a towel and set aside for 15 minutes.
Knead the dough again, divide in half and form sausages about 5 centimeters thick.
Cut pieces of the same size and roll out thin tortillas with a rolling pin.
Put two cherries on each tortilla and seal tightly. If the dimensions allow, put three pieces at once.
Pour the dumplings into boiling water and cook for 5 minutes after boiling.
Put the dumplings in a colander and leave to drain for 3-4 minutes.
Put the finished dumplings on a plate, sprinkle with the remaining sugar and garnish with mint leaves.
