Clean the crucian carp, gut, slice and rinse thoroughly.
Chop tomatoes, carrots, parsley and potatoes. Peel the onion from the husk and leave it whole.
Put the crucian carp, onion, bay leaf, black and allspice in a saucepan. Pour in cold water and cook for 20 minutes.
Catch the fish with a slotted spoon, strain the broth through cheesecloth. Discard the onion.
Return the pot of broth to the fire, add potatoes, carrots and tomatoes. Cook for 10 minutes.
Pour in the boiled crucians and continue cooking all together for 5 minutes.
Add salt, chopped parsley, squeeze garlic through a press and remove from heat after 2 minutes.
Insist the finished ear under the lid for 20 minutes.
