This dish will perfectly cope with the role of the main hot on any holiday. Baked rabbit turns out surprisingly juicy, soft and fragrant. Try to cut the vegetables so that the pieces are about the same size.

Wash the rabbit and cut it into small pieces.

Peel and slice potatoes, carrots, onions.

Mix rabbit meat, vegetables and rosemary sprigs.

Add salt, ground pepper, herbs of Provence and olive oil.

Stir, cover with cling film and leave to marinate at room temperature for half an hour.

Put the meat and vegetables in a greased form, pour boiling water and cover with a double layer of foil.

Bake for half an hour at 220 degrees. Then carefully remove the foil, reduce the temperature to 180 degrees and continue cooking for another 20 minutes.
