Such a bright and spectacular baked mackerel is not a shame to serve even to a festive table. Thanks to a pillow of vegetables with mushrooms, it turns into a full-fledged main dish with a side dish. Naturally, you can change the composition of vegetables at your discretion. I'll share my favorite option.
Ingredients
- Mackerel - 3 pieces
- Lemon - 1 piece
- Cherry tomatoes - 200 g
- Champignons - 250 g
- Bell pepper - 2 pieces
- Bow purple - 1-2 pieces
- Zucchini - 1 piece
- Greenery - 3 twigs
- Olive oil - 3 tbsp.l.
- Spices and seasonings (for fish) – 1 tsp.
- Paprika - 1 tsp.
- Salt - 1 tsp.
Step-by-step cooking recipe
Peel the fish and rub with salt, spices and paprika on all sides.
Make incisions on one side and put circles of lemon and tomatoes in them.
Coarsely chop all the vegetables with mushrooms, season to taste and put on the bottom of the mold.
Put the fish on top and sprinkle everything with olive oil.
Sprinkle with herbs and bake for 30 minutes at 190 degrees under foil and another 10-15 without it.
