Just a spoonful of tomato will make any soup brighter, more fragrant and tastier. Today I propose to experiment with such a simple recipe based on fish and vegetables. When serving, garnish it with herbs or a slice of lemon to taste.
Ingredients
- Cod - 450 g
- Olives - 140 g
- Chili pepper - 2 pieces
- Bell pepper - 1 piece
- Carrots - 1 piece
- Potatoes - 2 pieces
- Tomatoes - 1 piece
- Tomato paste - 1 art.l.
- Spices and seasonings - 1 tsp.
- Garlic - 2 clove
- Lemon juice - 2 tsp.
Step-by-step cooking recipe
Boil the cod for about 20 minutes and strain the broth. Put the fish aside for now.
Add chopped potatoes to the broth. After 5 minutes, add carrots and pepper, and after another 5 minutes – peeled and finely chopped tomatoes.
Add olives and tomato paste, stir the soup and boil a little more.
Return the fish to the pan and season the soup with spices, crushed garlic, chopped chili and lemon juice.
