Peel celery, potatoes, beets, onions and garlic.
Chop celery, beets, cabbage, potatoes, tomatoes and both types of onions. Grate the carrots on a coarse grater.
Heat the oil in a frying pan, add the onion and carrot and fry for 3-4 minutes until golden brown.
Add the celery root and fry for another 7 minutes, stirring constantly.
Add beets, tomatoes, peas of black and allspice. Cook for 10 minutes.
Pour 250 ml of hot water, cover with a lid and simmer for 15 minutes on low heat.
Boil water, add potatoes, cabbage, roast and cook all together for 10 minutes.
Add salt, squeeze garlic through a press and turn it off. Insist the finished borscht under the lid for 15-20 minutes.
