Vegetables should be present in our diet every day. It's not difficult, because there are a lot of such recipes. For example, you can cook a vegetable casserole. To make the dish look more beautiful, I add circles of yellow tomatoes on top.
Ingredients
- Young zucchini - 300 g
- Potatoes (medium) – 2 pieces
- Cabbage - 200 g
- Bell pepper - 1 piece
- Yellow tomatoes - 2 pieces
- Onion - 1 piece
- Chicken eggs - 2 pieces
- Milk (warm) – 1 glass
- Cheese (solid) – 200 g
- Olive oil - 3 art.l.
- Italian herbs - 1 tsp.
- Ground black pepper - to taste
- Salt - to taste
Step-by-step cooking recipe
Boil potatoes in uniforms until tender, cool, peel and slice.
Chop zucchini, cabbage, peeled onion and bell pepper.
Grate the hard cheese on a coarse grater.
Cut the yellow tomatoes into small circles.
Heat the oil in a frying pan, add the onion and fry until golden brown.
Add the bell pepper, zucchini and continue cooking for 7-10 minutes. Vegetables should be slightly reduced in volume.
Pour in the cabbage, cover with a lid and simmer for another 5 minutes.
In a separate container, whisk the eggs with salt and milk.
Add ground pepper, Italian herbs, cheese and mix well.
Grease the mold with oil, put half of the potatoes, season with salt and pepper.
Next lay out the fried vegetables and add a layer of potatoes again.
Pepper, salt and pour in the prepared mixture.
Spread the yellow tomatoes on top, cover with foil and send them to the preheated oven for 15 minutes.
Carefully remove the foil and continue baking for another 7-10 minutes.
