Dietary rabbit meat and equally healthy rice can be combined in one dish — risotto. Its taste and simplicity are simply amazing! Fry the meat with vegetables, add rice, broth, wine and simmer over low heat. Could anything be simpler?

Step-by-step cooking recipe

Wash the rabbit and cut it into small pieces.

Chop carrots, celery and peeled onion.

Heat the oil in a frying pan, put the rabbit and fry for 12-15 minutes.

Add the onion and carrot and cook for another 5 minutes.

Add celery, allspice and continue to fry for 3 minutes.

Add the washed rice, pour in small portions of wine and hot broth.

Add salt, and simmer all together on low heat for 30 minutes, stirring occasionally.

Add the olives, squeeze the garlic through the press and continue cooking for another 5 minutes. By the end of cooking, there should be very little liquid left.
