If you want to surprise your loved ones with an unusual and bright soup – this beetroot soup with cream is perfect. The bright pink color is so saturated! It's hard to believe that there are only vegetables in the composition and there are no dyes.
Ingredients
- Beetroot - 3 pieces
- Purple onion - 1 piece
- Olive oil - 30 ml
- Potatoes - 1 piece
- Apples - 2 pieces
- Vegetable broth - 800 ml
- Spices and seasonings - 1 tsp.
- Cream (20%) – 150 ml
Step-by-step cooking recipe
Bake the beets until soft for about an hour at 180 degrees.
Chop the onion and fry in olive oil.
Add the sliced potatoes and broth, and cook until the potatoes are soft.
Add the coarsely chopped apples and cook until they are soft.
Add the beetroot and chop the soup with a blender.
Pour in the cream, season to taste, bring to a boil again and remove from heat.
