It doesn't matter if you've ever tried to cook a real risotto before. This recipe will please both beginners and experienced cooks. And the thing is that it is both simple and very original. Minimum ingredients and maximum fun!

Ingredients

  • Pumpkin - 100 g
  • Fig (for risotto) – 50 g
  • Olive oil - 1 tbsp.l .
  • Onion - 1 piece
  • Garlic - 1 clove
  • Wine (dry white) – 50 ml
  • Water (or broth) – 250 ml
  • Parmesan (grated) – 25 g
  • Greenery (chopped) – 1 tsp.
  • Butter - 10 g
  • Salt - 1 pinch
  • Ground black pepper - 1 pinch

Step-by-step cooking recipe

Finely chop the onion and garlic, and fry in vegetable oil until transparent.

Fill in the risotto rice and continue frying for another minute.

Pour the wine into the pan, and wait until it is completely absorbed into the rice.

Add salt and pepper to taste, and start slowly pouring in water. Add each new portion only when the previous one is absorbed. Stir the risotto constantly.

When half the water runs out, add finely chopped pumpkin to the rice. And continue to extinguish on the same principle. The whole thing will take about 20 minutes.

Turn off the stove, add butter, grated cheese and stir the risotto.

Let it brew for a couple of minutes under the lid and serve, garnished with herbs.
