Tarator is a light cold soup popular in Bulgaria and some regions of Macedonia. The classic recipe uses sour milk. You can take exactly this or cook a dish with the usual one – to taste.
Ingredients
- Milk (plain or sour) – 1 l
- Olive oil - 50 ml
- Garlic - 4 cloves
- Nuts - 2 handfuls
- Greenery - 1 bundle
- Green onion - 4 pen
- Cucumbers - 4 pieces
- Salt - 0.5 tsp.
- Spices and seasonings - 1 tsp.
Step-by-step cooking recipe
Thinly slice the cucumbers, add salt and put them in the refrigerator for 10 minutes.
Chop the greens and green onions, add to the cucumbers.
Chop garlic and nuts in a blender and whisk with olive oil. Season and mix with vegetables and herbs.
Fill the tarator with cold milk.
