Baked cod with potatoes is a good family dinner. It's satisfying, simple, delicious and pretty fast. I suggest adding a little variety, and bake it all with tomatoes as well. And at the same time I will tell you what to do with potatoes, which are still cooked much longer than tender fish fillets.
Ingredients
- Cod - 800 g
- Potatoes - 400 g
- Cherry tomatoes - 250 g
- Spices and seasonings - 2 tsp.
- Italian herbs - 2 tsp.
- Thyme - 1 twig
- Olive oil - 2 art.l.
- Dijon mustard - 2 tsp.
Step-by-step cooking recipe
Boil the potatoes until they are half cooked and chop them coarsely.
Rub the cod with Dijon mustard and spices.
Put the potatoes and tomatoes in the mold, and the cod on top. Sprinkle with herbs and drizzle with oil.
Add a sprig of thyme and bake the fish in the oven under foil for about 30 minutes at 180 degrees.
