Defrost the dough at room temperature.

Roll out with a rolling pin, moving only in one direction. Cut the same triangles.

Put some jam on the wide edge of the triangle and gently roll it into a roll.

Cover the baking sheet with parchment paper and lay out the croissants, keeping enough space between them.

Mix the yolk with the milk, and lubricate the blanks with a silicone brush.

Bake croissants for 10 minutes in a preheated oven at 200 degrees. Then reduce the temperature to 180 degrees and cook for another 7-10 minutes.
