Lovers of healthy dishes will definitely like a simple recipe for vegetable pancakes. It is better to cook them in season, but in winter you can also find fresh vegetables in the supermarket. Such pancakes are served with sour cream, various sauces, caviar or pate.
Ingredients
- Potatoes - 300 g
- Bell pepper - 1 piece
- Tomatoes - 1 piece
- Onion - 1 piece
- Dill - 3 twigs
- Flour - 3 tbsp.l.
- Chicken eggs - 2 pieces
- Ground black pepper - to taste
- Salt - to taste
- Vegetable oil (for frying) – 80 ml
Step-by-step cooking recipe
Peel potatoes and onions and grate on a coarse grater.
Finely chop the tomato, dill and peeled bell pepper.
In a deep bowl, mix potatoes, onion, tomato, bell pepper and dill.
Add ground pepper, eggs beaten with salt and sifted flour. Mix everything well.
Heat the vegetable oil in a frying pan, put the same islands with a spoon, giving the desired shape.
Fry until golden brown on both sides and place on a paper napkin. Repeat the steps with the rest of the vegetable mass.
