I've tried many bagel recipes, but this one is the simplest and tastiest. Apple jam is used for the filling, if desired, it can be replaced with thick jam, jam or boiled condensed milk. The main thing is that the mass falls well on the dough and spreads.
Ingredients
- Flour - 1 kg
- Sour cream - 200 g
- Fresh yeast - 100 g
- Butter - 400 g
- Chicken eggs - 2 pieces
- Vanillin - at the tip of the knife
- Sugar - 2 art.l.
- Salt - 0,5 tsp.
- Egg yolks (for lubrication) – 1 piece
- Jam (apple) – 500 g
- Ground cinnamon - 1 tsp.
Step-by-step cooking recipe
Cut the butter into cubes and soften in a water bath.
Crumble yeast into warm sour cream. Mix gently so that the mass becomes homogeneous.
Add soft butter and lightly beaten egg with salt.
Pour in the sifted flour, sugar, vanilla and knead the soft dough. It is not necessary to knead for a long time, 5-7 minutes is enough.
Divide the dough into 6-8 identical pieces, put it in a bowl, sprinkle with flour and put it in the freezer for half an hour.
Take the dough out of the freezer and warm it up for 15 minutes at room temperature.
Mix each piece, form a ball and roll out a round cake.
Lay out a little jam, spread evenly with the back of a spoon on the surface and sprinkle with cinnamon.
Cut the workpiece into small segments and roll each into a roll.
Put the future bagels on a baking sheet lined with parchment and brush with egg yolk.
Bake the bagels for 25-30 minutes in a preheated 190 degree oven.
Repeat the steps with the remaining dough and filling.
