Dried tomatoes in the oven with butter for winter
In Italy, tomatoes are dried under the scorching Mediterranean sun. We'll go the other way and use the oven. Dried tomatoes will be a great addition to a glass of wine and a cheese plate, they can be added to salads and pizza, pasta and sauces.
Ingredients
- Cherry tomatoes - 1 kg
- Olive oil - 2 glasses
- Garlic - 6 teeth
- Rosemary - to taste
- Thyme - to taste
- Chili pepper - to taste
Step-by-step cooking recipe
Wash the tomatoes, cut in half, using a teaspoon, remove the watery middle with seeds.
Place the prepared halves of tomatoes on a baking sheet lined with parchment, add salt, sprinkle with olive oil and send them to a preheated 60 ° C oven for 6-8 hours. It is necessary to dry tomatoes with the oven door ajar! Tomatoes will be ready when moisture evaporates from them, but the fruits themselves will remain sufficiently elastic.
Cool the finished tomatoes slightly and place them in pre-sterilized jars. In the same place, send chopped garlic and chili pepper, sprigs of rosemary and thyme.
Fill the contents of the jars with olive oil to the top. Seal the jars tightly and store them in a cool, dark place.
