Pre-soak the beans overnight and boil until tender.
Separately boil the beets until tender. Peel and grate.
Chop the onion and carrot, and fry in oil until soft.
Add the chopped celery and fry for another 7 minutes.
Add beetroot, beans, tomato, salt, sugar and spices. Simmer all together for 30 minutes.
Pour in the vinegar, add garlic and herbs, simmer for another 5 minutes and roll the salad into sterilized jars.
