Salad “Kuban" is an excellent multicomponent vegetable preparation for the winter. To prepare this delicious, hearty, bright salad does not require special skills at all - the recipe does not involve cooking, and sterilization will take only 20 minutes.
Ingredients
- Cabbage - 1 kg
- Tomatoes - 1 kg
- Cucumbers - 750 g
- Carrots - 750 g
- Bell pepper - 750 g
- Hot red pepper - 1 pcs.
- Bay leaf - 3 pcs.
- Vegetable oil - 250 ml
- Vinegar (9%) – 100 ml
- Black Pepper (polka dots) – 15 pcs.
- Sugar - 75 g
- Salt - 2 art.l.
Step-by-step cooking recipe
Soak cucumbers in cold water for 1 hour - so they will become more crispy.
Chop the cabbage, add salt and lightly remember with your hands.
Peel the bell pepper from the seeds and stalks, cut into thin strips. Chop the hot pepper together with the seeds.
Cut tomatoes into medium slices, cucumbers into half rings about 0.5 cm thick.
Grate carrots on a coarse grater or on a grater for Korean carrots.
Put all the prepared vegetables in a large bowl, mix.
Add salt to the salad, add sugar, bay leaf, pepper, vinegar and vegetable oil. Mix everything well, cover with a lid and leave to marinate at room temperature for at least 1 hour.
Pack the salad together with the resulting liquid into pre-sterilized 0.5-liter jars, cover with sterile lids and send it to be sterilized in a large saucepan with boiling water. Pay attention! The water in the pan should reach the neck of the cans. The sterilization process for half-liter cans takes 20-25 minutes from the moment the water boils in the pan.
Close the jars tightly, turn upside down, wrap and cool.
