I love cooking and am always looking for new recipes for the winter. My latest discovery is spicy eggplant caviar! This is a great way to use the excess of the summer harvest and enjoy the taste of eggplant throughout the winter. The recipe is so simple that even a novice cook will cope!
Ingredients
- Eggplant - 1 kg
- Tomatoes - 3 pieces
- Carrots - 2 pieces
- Onion - 2 pieces
- Bell pepper - 2 pieces
- Hot red pepper - 2 pieces
- Salt - 1 art.l.
- Sugar - 2 art.l.
- Garlic - 1 head
- Vegetable oil - 100 ml
- Vinegar - 100 ml
Step-by-step cooking recipe
Peel and randomly chop all the vegetables.
Fry the eggplants in oil until browned.
Separately fry the onion and carrot. Add both types of pepper, tomatoes and fry for another 10 minutes.
Pass all the vegetables through a meat grinder or chop with a blender.
Add sugar and salt, and simmer the caviar for another 20 minutes.
Add garlic and vinegar, simmer for another 10 minutes and roll into sterile jars.
