Wash and peel all the vegetables well. Grate the beets and carrots on a coarse grater, chop the cabbage, cut the onion into half rings. Remove the dense middles from the tomatoes, cut into large cubes.
In a large saucepan, combine all the prepared vegetables, add salt, sugar, water and vegetable oil. Mix everything well, bring to a boil and cook over medium heat for 20-25 minutes, stirring occasionally.
At the end of cooking, add vinegar to the workpiece, mix again and remove the pan from the heat.
Pack the hot borscht dressing into sterile jars, tightly tamping the mass, roll it up, turn it upside down, wrap it up and leave it to cool completely. Store the cooled workpiece in a cool, dark place.
