Do you like vegetable snacks? Then you will definitely like cauliflower caviar. It is prepared simply: the vegetables are crushed and sequentially put into a stew pot. If there are no fresh tomatoes, add pasta, sauce or tomato juice.
Ingredients
- Cauliflower - 2 kg
- Tomatoes - 1 kg
- Hot red pepper - 1 pod
- Carrots - 250 g
- Onion - 150 g
- Garlic - 50 g
- Vegetable oil - 100 ml
- Vinegar - 80 ml
- Sugar - 2 tbsp.l.
- Salt - 1,5 art.l.
Step-by-step cooking recipe
Peel the tomatoes and put them through a meat grinder.
Grate carrots, peel onion and garlic and chop.
Disassemble the cauliflower into inflorescences and finely chop.
Cut the hot pepper lengthwise, peel from the seeds and chop.
Fry the onion and carrot until golden brown.
Add cabbage, tomatoes and simmer under the lid for 20 minutes.
Add garlic passed through the press, chopped hot pepper, salt and sugar.
Soak everything together for 10 minutes, add vinegar and remove from heat after 2 minutes.
Arrange the caviar in sterilized jars and roll it up.
