Legends say that royal gooseberry jam with cherry leaves was often served to Catherine the Great. Fortunately, the recipe has survived to our time and now we have a great opportunity to taste an exquisite treat.
Ingredients
- Gooseberry - 2 kg
- Cherry leaves - 50 pieces
- Sugar - 1,5 kg
- Citric acid - 0,5 tsp.
- Vanillin - at the tip of the knife
- Vodka - 3 tbsp.l.
- Water - 250 ml
Step-by-step cooking recipe
Mix the water with citric acid.
Add the cherry leaves and infuse for 2 hours.
Simmer for 15 minutes and cool.
Strain, add sugar, vanilla, vodka and boil for 5 minutes.
Pour in the gooseberries, turn off the heat and leave for 1.5 hours.
Put the pan on low heat, boil for 2-3 minutes and put it aside again for 1 hour.
Puree the mass with an immersion blender until smooth.
Boil for 5 minutes, put in prepared jars and roll up.
