The best addition to eggplant is ripe sweet tomatoes. This applies to everything from salads and stews to winter preparations. It is about the latter that I propose to talk in more detail today, and on this occasion I share my favorite recipe.
Ingredients
- Eggplant - 1 kg
- Tomatoes - 1.5 kg
- Sugar - 3 tbsp.l .
- Salt - 1 tbsp.l .
- Chili pepper - 0.5 pieces
- Garlic - 1 head
- Vinegar - 1 art.l.
- Vegetable oil - 4 art.l.
- Onion - 500 g
Step-by-step cooking recipe
Chop eggplant, onion and 500 g tomatoes.
Chop the remaining tomatoes in a blender with chili and garlic.
Boil the tomato mass for 15 minutes over medium heat.
Add vegetables and all other ingredients except vinegar, and simmer all together for 40 minutes.
Pour in the vinegar, cook for another 5 minutes and roll the workpiece into sterilized jars.
